Allspice takes its name from its aroma, which smells like a combination of cinnamon, cloves, ginger and nutmeg and has a warm, sweetly pungent flavor with peppery overtones. Dried allspice berries resemble brown peppercorns. Most commonly used in pickling and mulling spices, baked goods, pumpkin pie, and some meats. Allspice can be used as a substitute in baking for cinnamon, cloves or nutmeg. Conversely, to make a substitution of allspice, combine equal parts of cinnamon, cloves and nutmeg.
